Loaded Sweet Potato Toast

I can't take credit for the awesomeness that sweet potato toast is because it was blogged about long before I finally attempted it BUT it is my new favorite thing. Here are two options - one savory, one sweet. I often top the avocado one with a soft boiled or poached egg and local Yellowbird sauce - drool. Make this for breakfast or for a quick dinner and you will thank your lucky stars - delicious, filling, nutritious and easy! It's toast without the toast! Inherently gluten-free with dairy-free, nut-free, and/or egg-free versions. Customize to your hearts content.
